bran muffins with jam

Silences. I realized (again) that one of the reasons for the infrequent posts is because of the camera. If I don’t have photos, I find myself thinking “I can’t post about that”. Or if I do have photos and they aren’t yet placed on pages, my thinking is “I can’t post about that yet; the photos aren’t ready.”

Image tyranny!!

Before we had the camera, I didn’t let lack of images stop me from droning on. So, now that we have the camera, why should that change? So. Images or not, drone on, I will:

We had a little bit of extra prune filling left over from making vinarterta. It’s essentially prune jam and initially, we were just going to slather it on toast or biscuits.

But instead, yesterday, I made bran muffins and spooned prune filling into the centers of each muffin before baking them.

The muffins are wonderful!! Sort of like jelly busters, but better for us because they’re not deep fried. (Sorry, no photos….)

Pumpkin Bran Muffins with Jam Filling

  • ¼ c oil
  • ½ c brown sugar
  • ¼ c molasses
  • 1 egg, beaten
  • 1 c water
  • 1/3 c milk powder
  • ½ tsp baking soda
  • 2½ tsp baking powder
  • ¾ tsp salt
  • 1½ c wheat bran
  • ¾ c unbleached all purpose flour
  • ¼ c whole wheat flour
  • dash cinnamon
  • dash cardamom (optional)
  • prune filling, (any sort of jam will do)

preparation

  1. Turn oven on to 350F. Mix egg, oil, sugar, molasses, milk powder, and water in a medium sized bowl.
  2. Mix the dry ingredients in yet another bowl. Add the wet ingredients to the dry ingredients. Stir just enough to mix together.
  3. Spoon muffin mixture into 12 greased muffin tins.
  4. Use a small spoon to put a spoonful of prune filling onto each muffin. Carefully spoon muffin mixture from below to cover the prune filling.
  5. Bake at 350F for about 15-20 minutes until a cake tester poked in the centers of the muffins comes out cleanly.

Serve immediately with freshly brewed tea or coffee! Don’t forget to put the butter, cream cheese and/or goat cheese on the table.

notes:

* If you don’t have/want any jam, add ¼ c Thompson raisins to the dry ingredients.

    That sounds delicious. I think we need some next week for breakfast when I have more time.

    Guess what I’m thinking about…and it’s not about pumpkin muffins with jam filling.

    Oooops!!! Thanks for pointing out that typo, MrsB. There is NO pumpkin in the muffins with prune filling! (post fixed) -ejm
