One of the things I love about Christmas is how many fabulous goodies there are. But they do take their toll, don’t they?
A couple of years ago, my sister-in-law sent some wonderful homemade Health Biscuits. Of course, I asked for the recipe, which she sent immediately, saying that it was very easy. It has been sitting on my desk since then…. But FINALLY I got it together and made them just before Christmas.
Why oh why did I wait?! They are dead easy to make and they taste fantastic. (They don’t look quite as great as they taste though. I’d show you a photograph, if only I could find the photos that I could have sworn I took!! And now there aren’t crackers any left. Remind me to make them again soon.)
Don’s Health Biscuits
- 3 c rolled oats (D calls for oat flakes)
- 2 c unbleached all-purpose flour
- ½ c flax seeds
- ½ c wheat bran
- ½ c wheat germ
- ½ c oat bran
- 1 Tbsp salt
- ¾ c olive oil
- 1 c water
- 3 Tbsp honey
- Stir wet ingredients together.
- In another bowl, mix dry ingredients together.
- Add the dry ingredients to the wet and mix well. (Let your hands be your friends.)
- On a lightly floured surface, roll out as thinly as possible. (Put the dough between two sheets of waxed paper)
- Cut into squares with a pizza cutter and place the squares on an ungreased, parchment papered cookie tray.
- Bake at 300F for about 20 minutes. Allow to cool before storing in a tin.
These are delicious on their own or with blue cheese dip, roasted red pepper pate, sliced cheese…
The really terrific thing about these crackers is that health freaks will like them because they’re made with olive oil, honey, bran, seeds, etc. But regular folk who love to eat LOTS of butter and sugar will also like them because they taste so good!
Oh yes. One more thing. They’re not just for Christmas. At least not in our household. I think we’ll be having these often all year round.
