WHAT kind of ice cream??

Recently, Martin (The Cottage Feast) made coronation grape pie. He said:

Unnerving?? Personally, I think it just looks like cherry pie. Or blueberry pie.

Not unnerving at all.

What on earth could possess someone to even make beet ice cream?

Well, I’m afraid it’s my fault. I have been going through a phase of desperately wanting beet tops for dinner. But you can’t buy beet tops without the beets. As a result, beets appeared to be breeding in the bottom of the fridge.

I’ve tried to keep them down to the minimum by making beet salad. But one can only make so much beet salad! This is how the conversation went not long ago as we were unpacking groceries:

He: You got MORE beets?!

Me: How could I not? Look how beautiful those leaves are! I love beet top omelettes. And…

He: (interrupting) What are you going to do with them?

Me: Beet top omelette! And sauteed beet tops.

He: (wrinkling nose) Tonight?? Not with tonight’s dinner!! I don’t want those!! And what about all the beets in the fridge? What are you going to do with those?

Me: Beet salad!

He: (sighing) But we still have beet salad in the fridge now.

Me: Ummm….

He: (thinking) I know!! I’ll make beet ice cream!! What could be better?

Me: (secretly gagging) Great (cough) idea!!!

And off he went to rummage in the fridge and pull out all the topless beets rolling around in the bottom of the vegetable drawer.

Here’s what T did to make beet ice cream:

Beet Ice Cream

  • 1 litre (4 c) of 18% cream
  • 4 to 6 raw beets, peeled and finely grated
  • ½ to 1 c sugar, to taste

preparation

  1. Mix cream, grated beets and sugar in a pot. Just bring the mixture to a boil and take it off the heat – to infuse the cream with the beet flavour. (This step can probably be omitted.) Taste for sugar content. Pour through a fine mesh strainer to remove the lumps. Allow the mixture to cool and then process in an ice cream maker, following the instructions.

ice cream T adores beet ice cream! I confess that I just found the taste okay. Granted, I’m not the biggest fan of ice cream. It’s just too cold. But aside from the coldness, for me, this ice cream was just a little too beety.

Don’t get me wrong. I adore beets. But for dinner. Without sugar, thank you.

Beet ice cream has a slightly earthy flavour. Some people love it. Others, like me, can take it or leave it. Which kind of person are you? (You have to taste it before deciding!!)

Oooh!!! I just realized something great!! Now I can buy as many beet tops as I want! Whoohooooo!! :-)

Having said that I don’t want beets for dessert, WAIT until you hear about how beets work fabulously in cake. (Remind me to rave about that cake!)

    And here I am, thinking I had a crazy ice cream flavour up my sleeve for a future post… If you don’t mind I won’t try I like mine for dinner as well. (Finally someone who thinks ice cream would be so good if it wasn’t so darn cold!)

    And I thought I was the only one, Karen!! (Of course, I don’t mind at all if you don’t try beet ice cream. I doubt that I would have tried it if there hadn’t been a bowl of it in the kitchen.) I can’t wait to hear about the your crazy ice cream flavour – I just hope it’s not garlic. :lalala: -Elizabeth

    love beet cake so why not ice cream.

    I too love carrot cake and probably zucchini cake is great as well but I’m not so sure about carrot and/or zucchini ice cream? ;-) Still, MM, I look forward to hearing your thoughts after you’ve tasted the beet ice cream. -ejm
