Rats, only a couple of days into official summer and already it’s disgustingly hot. Last night we cut up the breast meat from Sunday’s butterflied grilled chicken and made the BEST chicken salad with grapes and toasted almonds. We discovered that we didn’t have quite enough almonds so used some salted roasted cashews as well…. I pulled a loaf of Rustic French bread out of the freezer. After resuscitation in the toaster oven, our dinner was ready. Ha!! So what if it the outdoor temperature had only dropped to 28C from the afternoon’s high of 34C!
