"Special" Chai
I first tried this at a cafe in Calcutta and couldn't believe how fabulous it was. I also couldn't believe that I was eating so many hot chilies. Please note that I do not normally condone the eating of so many chillies at once. But for some reason, the chillies work wonderfully with the eggs. I urge you to try it even if you are afraid. Use just one chilli the first time, but buy lots of green chillies. They're addictive....
I am assuming that you already know how to make an omelette...
Serve garnished with fresh coriander leaves. This is a wonderful winter breakfast. Have plenty of coffee, fruit juice and flat bread (rotis) as well. Or, instead of coffee, serve "special" chai (Indian tea with ginger and cardamon) afterwards. Delicious!!
