The Bread Baking Babes made Ensaimadas for their second anniversary in February 2010. This month is the BBBs' third anniversary and we decided that the anniversary bread would be a favourite of the breads baked so far. Even though I hadn't made them yet, I chose Ensaimadas as my favourite. How could I not? Ensaimadas are based on a Majorcan bread made with lard. We used duck fat.

Ensaimada dough is rolled out very very thinly.







Slather with soft fat. The traditional fat is lard. We used duck fat. Other BBBabes used goose fat, olive oil and butter.

Rolled up like a jelly roll.


Then coiled.

And baked.

Too bad I didn't REMEMBER to bake these on the top shelf!!

Good thing we have a sharp bread knife.

Rescued

But I seem determined to have blackened ensaimadas.

Luckily, the ensaimada is delicious inside.

We served the rescued and rewarmed ensaimadas with the most delicious brown lentils and homemade smoked sausage.

Fresh watercress with blue cheese dressing was the perfect accompaniment.
