This wonderful bread is based on 'White Soda Bread with Herbs' in "The Ballymaloe Bread Book" by Tim Allen. I wandered through our garden to snip the fresh herbs called for in the recipe (sage, chives and rosemary). When I mixed the dough, I couldn't stop myself from adding a little whole wheat flour so the bread wouldn't be quite so white....

The bread is shaped in a round and cut with an "X". It is somewhat like a giant baking powder biscuit. The remarkable thing is that it contains no fat but is still very moist and wonderful.

I wanted to break the bread apart - the same way that a baking powder biscuit would be broken apart.

But T wanted to slice the bread. (After tasting it both ways, I admit that sliced is the way to go.) We served the bread hot out of the oven with barbecued pork butt and barbecue-wokked asparagus. Needless to say, dinner was delicious.

We toasted the leftovers for breakfast the next morning. It was delicious with butter, goat's cheese and crystalized honey.

We decided to try making soda bread with an egg as well as buttermilk for the liquid ingredients and baking the bread on the barbecue. What a brilliant result!

While the bread was just finishing baking over indirect heat, we barbecue-wokked asparagus to go with grilled pork chops for that night's dinner. (No photos of the chops - trust me; they were brilliant.)

Here is how the bread looked just after coming out of the barbecue.

The next morning we steamed the last of the asparagus, smothered it with goat's cheese sauce and served it with sliced hard boiled eggs on toasted soda bread. Oh my.

We garnished the dish with chives and a viola from the garden.
