There just happened to be lemons in the fridge so we decided we neeeeeeeeded to make Eggs Benedict. We also had some spinach and bacon so I turned mine into Eggs Florentine. I don't care for poached eggs so boiled and sliced them before smothering them in Hollandaise.
Hollandaise sauce is the perfect finishing touch for bacon, eggs and toast.
