Normally, we bake naan on a stone in the oven or directly on the grill in our gas barbecue. One night a fuse blew on our oven JUST as we were about to bake the naan. Luckily, we were familiar with using other methods of cooking bread.

Preparation: Just before baking, shape the bread by flattening it. Naan is traditionally made in teardrop shapes but any flat shape will do.

Place the shaped bread directly on the preheated bread stone and discover that the stone isn't at all hot because a fuse has just blown. (Note that the stone is broken because it was dropped at some point. This is not a problem. The pieces can be pushed together and the stone still used.)

Carefully remove the uncooked bread from the cold oven. Switch the method of cooking by using a tava and rack on the stovetop. (Pita can be made on the stovetop as well.)

Happily, this naan made on the stovetop turned out quite well. Especially because it was served with rogan josh, beets & turnip with fennel seeds, and steamed broccoli.
