Bread made with wild yeast captured this summer, following a recipe in Piano Piano Pieno by Susan McKenna Grant. As the cooler weather set in, I was having difficulty getting the bread to rise properly. I kept turning out flat loaves of bread because of allowing the dough to over-rise. But at last I got it right and baked these two beautiful loaves!
While the bread was rising, I placed 3 star shaped cookie cutters on top to etch a design into the bread. I carefully removed them just before putting the bread into the oven.
