Green Chili Omelette

I first tried this at a cafe in Calcutta and couldn't believe how fabulous it was. I also couldn't believe that I was eating so many hot chilies.
Ingredients
1 medium onion, sliced
1 Tbsp vegetable oil
4 eggs, beaten
6 green chillies (Thai chillies, chopped in small rings)
pepper and salt to taste
coriander leaves (aka cilantro, aka Chinese parsley) to garnish
Preparation
I am assuming that you already know how to make an omelette... in an omelette pan, sauté onions in oil until they are just starting to caramelize. Add chillies and sauté for half a minute. Pour eggs into pan and cook until done. Serve garnished with fresh coriander leaves. This is a wonderful winter breakfast. Have plenty of coffee, fruit juice and flat bread (rotis) as well.
Please note that I do not normally condone the eating of so many chillies at once. But for some reason, the chillies work wonderfully with the eggs. I urge you to try it even if you are afraid. Use just one chilli the first time....
Or, instead of coffee, serve "special" chai (Indian tea with ginger and cardamon) afterwards. Delicious!!
