Peanut Sauce

The measurements are pretty close, but you will have to play with it until you have the right consistancy and taste.
Ingredients
peanut oil
1 whole dry chili
½ tsp crushed ginger
½ tsp crushed garlic
½ can (14oz) coconut milk
1 tsp shredded, dried coconut
3 or 4 shakes soy sauce
1 Tbsp garam masala
½ tsp coriander
½ tsp cumin
1/8 tsp tamarind paste (optional)
some sugar
2 Tbsp peanut butter
2 Tbsp lemon juice
Preparation
Put the whole chili in a pan with a little oil and fry it until it is black. Add the ginger and garlic and toss those around for a bit. Add everything else except peanut butter. Bring to a boil stirring constantly. Cook gently 2-3 minutes. Add peanut butter and cook, stirring until the sauce thickens. Add lemon juice and serve. This keeps well in the freezer.
