Ingredients
potatoes
rutabaga (or turnip)
carrots
parsnips
whole garlic cloves, peeled
olive oil
fresh rosemary and/or oregano and/or marjoram and/or thyme sprigs
Preparation
Wash vegetables well. Peel those that you like to peel. (We NEVER peel potatoes.) Put coarsely chopped vegetables in a shallow baking dish. Drizzle with olive oil and sprinkle with herbs. Bake at 350F for an hour and a half.
Mash the vegetables. Add some butter, milk, salt and pepper and mash some more.
This is especially fabulous with grilled steak and ginger sauce. It is also very good with roast chicken.
