Roasted Garlic

Ingredients

Preparation

  1. Separate cloves and peel off the outer paperlike skin. Put cloves in a small ovenproof bowl with a little olive oil.
  2. Bake at 400F for 10 - 15 minutes until the cloves are golden and crisp.

This is excellent on pizza, mashed into potatoes, or with grilled meats. It is also brilliant with grilled kalamari.

Oven Dried Tomatoes

Ingredients

Preparation

  1. Wash plum tomatoes and cut into quarters.
  2. Lay them on a rack on top of a cookie tray. Sprinkle on a little seasalt if you want. Bake at the lowest temperature your oven will go to for 8 - 12 hours until dry and bright red. (Some people use the pilot light of the oven only.)
  3. Allow to cool, then transfer to a clean glass jar and store in the refrigerator.

This is excellent on pizza and far superior to the store-bought sun-dried tomatoes that have been sitting on shelves for eons.

Roasted Red Pepper

Ingredients

Preparation

  1. Wash the red pepper well. Place it whole into a 400F oven oven for a total of about 20 minutes. Turn it every 5 minutes til all sides are puffy and dark coloured all over. Don't worry if some of it gets black. Remove from oven and cover with a paper towel and let sit for about ten minutes.
  2. Peel the red pepper. The skin should easily pull away. Cut the pepper in half and discard seeds. Dry off excess liquid with the paper towel.

This is excellent julienned on pizza or puréed in roasted red pepper pate.

Mashed root vegetables  

Ingredients

Preparation

  1. Wash vegetables well. Peel those that you like to peel. (We NEVER peel potatoes.) Put coarsely chopped vegetables in a shallow baking dish. Drizzle with olive oil and sprinkle with herbs. Bake at 350F for an hour and a half.
  2. Mash the vegetables. Add some butter, milk, salt and pepper and mash some more.
This is especially fabulous with grilled steak and ginger sauce. It is also very good with roast chicken.

Roasted Potato Chunks

Ingredients

Preparation

  1. Wash and cube the unpeeled sweet potato(es) (or are they yams?? - they are the orange/gold fleshed ones).
  2. Drizzle with olive oil, sprinkle with seasalt and bake in a shallow dish until they are a little crisp on the outside and soft inside. (oven at around 350F for 30 to 40 minutes).

They're great with chicken and rice or grilled porkchops and green beans.

*OR* Substitute Yukon Gold Potatoes (or any other good baking potato) and serve with any grilled meat. Left over roasted potatoes are wonderful sliced into a spinach omelette.
