Caramel Corn
Poppycock™ knockoff
Ingredients
- 6 c air-popped popcorn
- ½ c toasted pecans
- ¾ c white sugar
- 1 tsp brown sugar
- ¼ c light corn syrup
- ½ c butter
- 1 tsp salt
- ¼ tsp baking soda
Preparation
- Bring sugar, corn syrup, butter and salt to a rapid boil in a large pot.
- Stir constantly. When it is at a rapid boil, quickly add the baking soda. It will foam. Keep stirring. Add the popcorn and pecans and keep stirring until covered with syrup.
- Dump the mixture onto a greased cookie sheet or wax paper. Stir to separate. Bake for 15 to 30 minutes at 250F. Let cool to room temperature. Store in a cookie tin.

Peppered Pecans
Ingredients

¼ lb butter
- 1 lb shelled whole pecans (uniform in size)
- 1 tsp salt
- 1 tsp freshly ground pepper (or more)
Preparation
- Preheat oven to 350F.
- Melt butter in shallow baking pan. Add pecans and stir well.
- Bake 10 to 15 minutes stirring every 5 minutes. Remove from oven and sprinkle with salt and pepper, stirring well to coat.
- Let nuts cool in pan. This recipe is very nice for gifts. Pack them in attractive looking jam jars with good lids.

Cheese Cookies

(Makes about 4 dozen)
Ingredients
- 1½ c grated cheddar (about 6oz/170gm)
- ½ c butter, softened
- 1 Tbsp vegetable oil (Canola, Safflower, Sunflower, or ...)
- 1 c allpurpose flour
- ½ tsp salt (more or less depending on whether you use salted or unsalted butter)
- 1/8 tsp crushed chili pepper
Preparation
- Put salt and chili pepper into a mortar. Use the pestle to crush the chili pepper very finely
- In a small bowl, cream cheese, oil and butter together.
- Add flour and spices and mix til smooth. Let your hands be your friends.
- Shape into a log about 1 inch in diameter. Wrap in waxed paper. Chill til firm.
- Preheat oven to 350F. Slice dough into very thin coin shapes. Bake on an ungreased cookie sheet (allow some space between each cookie) for about 10
12 to 15 minutes or til lightly golden and bubbly.
These are wonderful served with pre-dinner drinks OR after dinner with fruit.

Roasted Pumpkin Seeds
Ingredients
- 4 l. water
- 2 Tbsp salt
- 2 c pumpkin seeds
- 1 Tbsp olive oil
Preparation
- Preheat oven to 300F.
- Bring salted water to a boil. Add pumpkin seeds and boil for 10 minutes.
- Drain and spread the seeds on an olive oiled cookie sheet.
- Roast the seeds for at least 30 minutes, stirring and tossing frequently. They are done when they aren't at all wet.
