No Knead Bread

While googling the video in the previous post, we ran across a Mark Bittman video demonstrating no knead bread. This method , like the focaccia "method" substitutes time for kneading. You simply mix the flour, salt, yeast (very little required) and water together and let time (12 to 18 hours) do all the work of developing the gluten. The wet dough is then dropped into a pre-heated pan and baked with the lid on for 2/3 of the baking time (to keep the humidity high). Unlike the focaccia, I haven't tried this yet (but will today).

I've not tried making no-knead bread either. But I've heard that it tends to get stale very very quickly. (no idea why that would be) It's supposed to be fabulous on the actual day it's baked though.

It will be really interesting to hear how your no-knead bread turns out, MEF.
