August 2008: It's nice to add a few green beans too. Add them after the cauliflower so they don't get overdone. They look pretty and they taste good too. In 2008, we began to add some toasted toor dahl at the same time as the spices. The dahl adds a lovely nutty flavour. And as you can see from the colour comparison between the dish below and the dish in the photo above, we now use considerably more turmeric as well.

Aloo gobi is delicious with naan, rogan josh and beet salad too. In fact, aloo gobi is delicious no matter what it's served with....

Without turmeric, aloo gobi would be completely incorrect. We use turmeric in almost all Indian cooking; it's as common as salt, pepper and chilis. These photos aren't the best but they're all I could find in our files and I'm too lazy at this moment to get the camera and take better ones.
