Half-Apple Tart

We got the idea for this pie the Toronto Star's Chef's Showcase article about Jason Barato's (Trattoria Giancarlo) Apple Crostatas. The apples are simply halved rather than sliced - each tart contains half an apple. Instead of serving the tart with ice cream, as suggested, we put wedges of Back Forty Highland Blue on each plate. How delicious!
