In spite of the name "cake", this yeasted delight, made with butter instead of lard, is closer to cinnamon buns or hot cross buns. It is not exceedingly sweet but it is exceedingly delicious.
Roll the dough out into a rectangle. Spread filling over two thirds. Fold the empty third over the middle third. Fold the remaining third over to form a packet. Seal the edges and rotate a quarter turn. Allow the dough to rest for about 5 minutes. Roll out again and repeat the folding and turning at least 3 times.
Here it is almost finished baking. The internal temperature was just under 200F - a little low.
We removed the tin, lowered the temperature by about 25F and baked the bread for about 5 minutes more until it was done.
