These savoury biscotti (rusks) are made with white wine (a pinot grigio, in this case) and flavoured with sesame and fennel seeds.

After the dough has risen, it is shaped into loaves, which are immediately sliced. The shaped, sliced loaves are covered and left for about an hour to rise.

The bread is then partially baked for a short time at a very high heat. The slices are then separated and returned to a slow oven to finish baking. The result is a delicate crisp bread.
