Brown Bread - Granary®-style Bread

March 2015

Granary® bread flour is made from a mixture of wheat flour, wheat bran and 17% malted wheat flakes. It is readily available in UK but can easily be made at home. Well, relatively easily. You just have to find a source of malted wheat flakes.... The flour mixture used for the brown bread shown here was made with a mixture of crushed malted wheat berries, 100% whole wheat flour, unbleached no-additives all-purpose flour and a very small amount of dark rye flour.

We were thrilled to discover that there is a homebrewing supplier a very short distance from our house. We got malted wheat berries "white wheat" (that the fellow crushed for us just before we paid) and dry barley malt extract "Briess Golden Light Dry Malt Extract".

Fermenting overnight, the starter made from crushed malted wheat, whole wheat and dark rye flours, water and a tiny bit of yeast became almost pudding like and a quite pungent.

Mixing and kneading the dough was a joy.

Going against the instructions, I left the dough to rise in an unwashed, unoiled {gasp} bowl. It was no surprise that there were zero problems turning the dough out once it had risen.

We decided to make 3 smaller loaves rather than 2 regular sized loaves.

The dough was a little more active than expected and over-rose, splitting at the top.

Just out of the oven - the fragrance was fantastic and the bread was quite light-weight. At last! Real brown bread!

Sometimes it's difficult to take photos when a furry black fiend neeeeeeeds to see what is new. We keep imagining that eventually the creature will learn that the house rule is "four paws on the floor".
