Russian Rose

The BBBs decided to celebrate World Bread Day together and make bread based on filled braided bread traditionally made in the Caucasus area.

These roses were made by coiling Russian braids. The fillings were savoury: one filled with prune/onion/goats' cheese and the other with olive oil, seasalt and sunflower seeds.

The dough is rolled out into rectangles and each one slathered with its filling before rolling it up like a jelly roll.

After rolling like a jelly roll, it was cut in half lengthwise, then the two pieces Russian braided together by twisting them. After braiding, it was coiled to make a rose. Because the prunes pieces were a little large, the roll kept wanting to fall apart. (Please take a look at the shaping of a sweet Russian braided bread formed into a ring. It can also be shaped into an S.)

One shaped loaf went into a quiche pan and the other into a spring-form pan.

The prune/onion/goats' cheese filled bread was baked in a parchment lined spring form pan, which forced the dough to spread upwards.

Here is how the sunflower filled bread turned out.

This Russian rose was baked in a parchment lined quiche pan, which allowed the dough to spread outwards to create a flatter loaf.

We sliced the prune/onion/goats' cheese filled bread first.
