This cauliflower au gratin is simply lightly steamed cauliflower covered in a simple bechamel made with bay leaf and onion infused milk, butter, olive oil, flour and one more essential ingredient: an anchovy.

Cauliflower au gratin is lovely with or without bread crumbs. We toast the bread crumbs in olive oil and those who like them (who doesn't like bread crumbs???) can scatter them on top just as the cauliflower is served.

The casserole dish was another lawn sale find. About 8 inches long, it's the perfect size for making cauliflower au gratin for 2 hogs.

We bought this gratin dish at a lawn sale this summer (2008). We thought it would be perfect for cauliflower au gratin - and it will be - when we're serving cauliflower au gratin to more than two people.
