Heat oil in wok. Add a few peanuts. When the peanuts begin to bubble, the oil is hot enough.
Remove from heat and add toasted chili flakes.
Add sugar and salt
Stir well and allow to cool
Taste and adjust seasoning by adding salt, sugar and/or chili flakes (scroll up for more photos)
Toasted coconut, peanuts and chili flakes is fabulous by itself as a party snack or as a garnish on steamed rice. It's particularly good with coconut curry.
