Have the chicken mole ready. (Or try another mole.)
Soften the tortillas by frying for a short time in oil.
Put a small amount of chicken mole into the center of each tortilla and roll up.
Arrange the rolled tortillas in a baking dish.
Cover with chopped onions, cheese and bake for about 35 minutes. Let enchiladas rest for about 5 minutes before serving.
Enchiladas may not be the prettiest looking dish but they are absolutely delicious. Serve with a green vegetable and garnish with creme fraiche and coriander leaf if you have it. (Heh, we didn't have any coriander leaf....)
