These cookies were made using a recipe for Rosanne Pezelli's (Bakerbots Baking) Ginger Cookie Ice Cream Sandwiches
As well as ginger, the cookies have ground cloves, cardamom and black pepper in them and just before baking are rolled in sugar and black pepper.
Let the cookies cool completely on a rack before storing them in an airtight container so they'll stay wonderfully chewy on the inside and crispy on the outside.
I put even more crystalized ginger than ever in this batch made for Christmas 2012. They are brilliant.
