Harissa ingredients: dried cayenne chillies, cumin seeds, caraway seeds, ground coriander seed, olive oil, seasalt, garlic
Soak the chillies in just boiled water.
Toast the seeds. Add ground coriander seed. Grind toasted spices.
Puree presoaked chillies with salt.
Add garlic and puree some more.
Add oil and puree some more. See how it emulsifies.
Taste and top off with a little more olive oil if you want. The small jar on the bottom of the photo is the first batch of harissa made with a mortar a pestle rather than electric food processor. The ingredients are the same but the result is a little more rustic and the oil does not get encorporated completely. (The first batch of harissa is also shown at the top of the page.)
