This amazing and wonderful chicken was made from the recipe for Djaj Bil-Bahar Il-Asfar in SAVEUR No. 157. The spice rub for it contains, among other things, dried rose hips.
The recipe was included at the end of Felicia Campbell's beautifully written piece "Hearts and Minds".
Our chicken turned out to look easily as good as the one in the photo in the magazine. Even though we don't have that beautiful piece of tile....
This chicken is wonderful with pink rice. Here, we used chicken wings and served them on the rice with stir-fried beet greens & yellow pepper. The garnish is summer savory from the garden.
