This is perfect on a hot summer night.
Prepare dipping sauce and wash herbs. Grill the chicken. Put cold pre-cooked vermicelli rice noodles into bowls. Drizzle a little dipping sauce (and toasted sesame oil if you like) over the noodles. Lay the chicken on top. Lay stir-fried Chinese broccoli on the side of each bowl. Garnish with herbs and serve with extra dipping sauce.
It doesn't get much better than this.
