It turns out that vacuum packed olives keep for a very long time!

Note the best-before date: Avr 1999! We ate the olives anyway. After being reconstituted with boiling salted water and a little olive oil, they were delicious. And the added bonus was that there were zero ill effects.

A couple of weeks after the experiment, we served the olives with goat's cheese and herbed olive oil to guests.
