July 2013: Made with chicken stock and tomatoes, this rice is based on a traditional Iraqi-Jewish recipe. There are doubtless zillions of recipes for Iraqi Pink Rice. We followed one (on "It's Sooo Good!" sooogood.org/iraqi_food_recipes/iraqi_pink_rice.html) that calls for tomato paste.
July 2015: We don't always have tomato paste on hand, but we often have tomato sauce in the freezer. To use it for Pink Rice, we reduce it until it is the consistency of tomato paste.
We served the rice with beet greens & yellow pepper and Djaj Bil-Bahar Il-Asfar (in this case: grilled chicken wings that had been dusted with Iraqi yellow spice powder). The garnish is summer savory from the garden.
