Ingredients
sweet potato (or Yukon Gold potato) - one medium potato per person
olive oil (or sunflower, or safflower)
sea salt
Preparation
Wash and cube the unpeeled sweet potato(es) (or are they yams?? - they are the orange/gold fleshed ones). Drizzle with olive oil, sprinkle with seasalt and bake in a shallow dish until they are a little crisp on the outside and soft inside. (oven at around 350F for 30 to 40 minutes). Serve over top South American chicken and rice. They're also great with grilled porkchops and green beans.
*OR*
Use Yukon Gold Potatoes (or any other good baking potato) and serve with any grilled meat. Left over roasted potatoes are wonderful sliced into an omelette.
