Chicken Salad with Grapes and Toasted Almonds © llizard aka ejm 2000, 2002

Ingredients Preparation
  1. Grill chicken breasts (or use left over roasted chicken) and let cool. Dice.

  2. Toast whole almonds and let cool.

  3. Mix chicken, almonds, celery, green grapes, onion, Dijon mustard, mayonnaise, salt and pepper in a bowl and refrigerate.

  4. Serve the salad on a bed of lettuce and red pepper. Garnish with whole green onions and fresh herbs.
