What a fantastic aroma!!

I’m almost fainting from the unbelievably delectable smells wafting up from the kitchen. Cherry’s ClayPot Chicken will be ready soon. Remind me to rave about the taste. (I feel certain that we’re going to love it and it will be a keeper.)

    I am starting to be annoyed with myself that I gave away a clay baker. We had used it once in more than 20 years, and it was just sitting around collecting dust. My recollection of the results are that the clay pot didn’t seem any better than lots of other pots that do not require soaking and are easier to clean up. Can one use Cherry’s recipe with an ordinary oven baker? That recipe sounds divine.

    This would probably work in a regular covered roasting pan. Although I wonder if soaking the clay pot in water before cooking makes a difference. Maybe you would have to put a broiling tray full of water on the bottom shelf of the oven to add some steam?

    Really? You thought your clay baker was difficult to clean, CAM? I just soak ours over the dinner hour (or overnight) in clear water and after soaking, use a clean brush to clean off the sides. I then spray it with a bit of vinegar, let it dry and store it for the next time. What could be easier?

    Well, perhaps I could try again if I found a clay baker at a garage sale or thrift shop. I see they are quite expensive nowadays. Twenty-eight years ago, I don’t think they were very pricey.
