Banana Cinnamon Chocolate Swirls Bread

To make this variation of banana cinnamon buns, I used the Jamie's (Life's a Feast) shaping method for yeasted nut roll coffee cake.

Jamie's coffee cake recipe is baked in a tube pan. But we don't have a large tube pan. I copied Tanna's (My Kitchen in Half Cups) idea and made my own tube pan using parchment paper, a metal cup and our large spring form pan.

The dough is divided into two, flattened into rectangles that are slathered with chocolate cinnamon butter and then rolled up jelly-roll fashion. The first roll is placed seam side UP in the tube pan and the second roll seam side DOWN. The top is brushed with milk and a few pepitas are scattered overtop. It is then sprinkled with cinnamon. Here the bread is shaped and ready for proofing.

In a relatively short time, the loaf had doubled and it was ready for baking.

Here it is just out of the oven. We left it to cool for about 20 minutes inside its tin placed on a rack.

The bread continues to cool after the pan has been removed. It was easy getting the outer sides off.

The tube was a little trickier... but at last, it too was removed.

Luckily, there was no breakage when removing the tube. The cake continued to cool on a little rack placed on the platter.

The bread looks almost more impressive when cut open to show off the two inner swirls.
