To make this dish, first fennel and mustard seeds were put into hot oil and fried for a short time until the mustard seeds began to pop. Then sliced onions were added and cooked until caramelized. The beets were peeled and sliced then steamed til almost fork tender. The sliced turnips were added to be steamed til tender. The steamed vegetables were tossed into the onion mixture. Pepper, salt and garam masala were added just before serving.
Here they are served with palak paneer (spinach and cheese) and rogan josh.
Another night, we added some broccoli leaves and chili flakes to the beet/turnip mixture.
We served the beets with steamed broccoli, rogan josh and naan.
