The nasturtium is one of my favourite edible flowers. I took this photo yesterday; if I had known that our ‘Empress of India’ nasturtiums were going to start flowering one day before the deadline for Barbara’s (“Tigers and Strawberries”) Spice is Right III: The Perfumed Garden, I might have done a complete about-turn and used nasturtiums instead of violas! (Hmmm, I wonder if nasturtiums would be too strong a garnish for srikund…. Read more about srikund here.)
I think that we will use the first nasturtiums of the season to garnish a savoury dish – perhaps a chop resting on a chicken stock reduction with some butter/lemon asparagus and crusty bread.
